My go to cookie recipe. Whole wheat and jaggery give it a beautiful distinct taste .
Ingredients :
- 1/2 cup wheat flour
- 1/8 teaspoon baking soda
- 1 pinch salt
- 2 tbspn granulated sugar
- 2 tbspn jaggery paste/pwdr
- 1/4 cup cold butter
- 1 tbspn milk , at room temperature
- 1/4 tspn teaspoon vanilla extract
- 1/4 cup choco chips
Procedure :
- Mix wheat flour, salt and baking soda well in a bowl and set aside.
- Add cold but soft butter to another bowl and whisk well for 2 mins.
- Add sugar and jaggery to the butter and whisk again. Cream till the mix turns fluffy. Do not overdo as this can result in butter and sugar separating out.
- Add the vanilla extract to the butter sugar mix
- Next add the flour mix to it.
- Mix well to form a dough. Add milk and choco chips.
- The dough must be moist but not sticky.
- Shape into cookies
- Preheat oven to 180 for 15 mins
- Bake for 10 mins.
- The cookies will be soft on the middle but will form up after a while.
