Veg lunch and i was looking for something different to make with the ladies finger. Hubby and I were bored of the same old thorans and mezhupurattis. This is my version of the bharwan bhindi.
Ingredients :
Ladies finger – 1/4 kg
Besan (Gram flour) – 1 tablespoon
Red chilli powder – 1 tablespoon
Coriander powder – 1 tbspoon
Garam masala powder – 1 tbspoon
Cumin powder – 1/2 tbspoon
Asafoetida – 1/2 teaspoon
Salt – 1/2 tbspoon
Lime juice – 1 tablespoon
Procedure :
- Mix all the ingredients to form a firm paste. The besan plays the role of binding all the masala powders together. Use a littlle water for the same. Keep the paste aside.
- Wash, dry and cut off the edges of the ladies finger. Make a slit in the middle on each of them.
- Now fill the paste into the ladies finger.
- Heat oil in a pan and shallow fry the ladies finger. I like them crisp. Adjust the cooking time based on how you much you want the ladies finger to be cooked.

No Aparna. Shallow fried for a long time in a pan. Added this info to the post 🙂
