Bilimbi or tree sorrel is widely available in Kerala and is known as Irumban Puli in Malayalam. Used to make pickles, squashes and even wine. My MIL makes all of these. Considering its scorching hot here, bilimbi squash is a great idea to work on. This is also widely known for to relieve cholesterol and improve blood circulation.

- Bilimbi – 1/2 kg
- Cook the bilimbi in water and blend in a mixer. Strain the juice out.
- Boil the sugar and water. (1:1.5 ratio of water and sugar)
- Once the sugar has dissolved completely, mix the dissolved sugar syrup and the juice extract. Store in the refrigerator.
The thick pulpy juice can be refrigerated and used as a squash. Just mix with water whenever you feel like a glass 🙂
