Baked Spaghetti Frittata

Frittata in simple words is an Italian version of the Omelette. It usually contains Spaghetti, Macaroni or any other pasta. The filling has no fixed set of ingredients. Any vegetables or meat can be used for the filling. I have made this dish without meat.

Ingredients : (Serves 2)

  • 4 eggs
  • 1 bell pepper
  • 1 onion
  • 1 tomato
  • 8-10 button mushrooms
  • 3 stems of parsley finely chopped (use coriander leaves if you dont have parsley)
  • Salt
  • Ground Pepper
  • Grated cheese (I used Cheddar cheese)
  • 1 tablespoon olive oil (Can be substituted with refined oil)
  • Spaghetti pasta
  • Butter to grease the baking tray.

Procedure :

The procedure to make the frittata is extremely simple.

First, chop the bell pepper and onion into thin long strips. Remove the pulp of the tomato and chop it into small square pieces. Wash, clean and chop the button mushrooms longitudinally into four pieces each.Next, heat a tablespoon of the oil in a skittle. Stir fry the veggies for 4-5 minutes retaining their crunch.

Beat the eggs in a bowl. Add chopped parsley ( Parsley is easily available in the Indian market these days. I buy them from Nilgiris). Add the pepper powder and salt. Add the stir fried veggies. Keep it aside.

Cook the spaghetti as per the instructions on the pack. (Add spaghetti with a pinch of salt to boiling water and leave it immersed in the water till it cooks through). Once it is done, drain out the water and spread the spaghetti on a plate. Once it cools, arrange the spaghetti on a butter greased baking tray. Pour the egg mixture over this and mix well with a fork. Add grated cheese on top.

Preheat oven to 180 degree and cook for 30 mins.

Alternately, this mixture can be poured into a pan and cooked on a gas flame. Keep the pan closed with a lid and you will be able to see the mixture turn into a thick pancake.

  1. Hi Sheila, of course you can use egg whites instead of whole eggs. Just remember to substitute each whole egg in this recipe with egg whites from 2 eggs. Another important thing to remember would be that egg whites alone would make the dish a tad bit dry/hard. Let me know ow it goes 🙂
