Ingredients : (Serves 2)
2 cups rava(sooji)
1 cup curd
1 spoon Eno fruit salt (for instant fermentation)
1/2 teaspoon salt
chopped curry leaves
2 green chillies chooped
7-8 chopped cashew nuts
2 teaspoons urad dal
2 teaspoons chana dal
1 tablespoon ghee
Tomato slices to garnish
Heat the ghee in a pan. Add urad dal, chana dal and cashew nuts to it. Rast till they turn golden brown. Now add the rava to this and roast for 4-5 mins. Even if i have “roasted rava” which is available in the market, i heat it for about 2 minutes in the pan. Keep it aside and allow it to cool.
Meanwhile, add green chillies, chopped curry leaves and salt to the curd and mix well.
Once the rava has cooled, add this curd mixture the it. Mix well.
Prepare the idli moulds by oiling them and arranging thin tomato slices in them before pouring the mixture into them.
Add 1 spoon of Eno to this mixture. It starts bubbling and gets aerated .Mix well and immediately pour the mixture into the idli moulds.
Please note : After adding Eno, do not wait too long to steam the idlis.
Steam it for 5 minutes. Serve hot with coconut chutney.
