Egg masala is a very common household preparation . Its popularity can be attributed to the taste and ease at which it can be made. A small twist can change the texture and taste of this simple dish.We can used boiled eggs, scrambled eggs or even bulls eye with the same masala. As the title suggests, i will be showing you my take on the bulls eye egg masala.
Ingredients : Serves 2
2 green chillies
1/2 teaspoon turmeric powder
1 teaspoon chilli powder
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon mustard seeds
2 teaspoons ginger-garlic paste
8-10 curry leaves
salt as per taste
Heat oil in a pan. Add mustard seeds to it. Once the mustard starts spluttering, add curry leaves, chopped green chiliies. Saute for 2 mins. Now add the chopped onions to this. Cook til the onion turns translucent. Add salt, ginger garlic paste, turmeric, chilli powder, coriander powder, garam masala powder. Cook till the raw smell of the masala vanishes and the powders blend well with the onion. Then add the chopped tomatos to this mixture. Cook well till the tomato become soft and blends into the onion masala mixture.
Now, break the eggs into the masala. Do not stir.
Cook for 3 minutes till the yolk cooks and does not run.Serve hot with roti 🙂
